Sheet Pan Salmon Meal

Ingredients
Sheet Pan Salmon Ingredients
- 4 Salmon Filets
- 2 zucchinis halved
- 1 lb. baby gold potatoes or fingerlings
- Dr. J’s all-purpose rub or your favorite
- 1/3 C Dr. J’s pesto or your own favorite
- 2 T extra virgin olive oil plus a little extra for the salmon.
- Kosher salt
- Ground black pepper
Dr. J's AP Rub Ingredients
- 2 T smoked paprika
- 2 T Paprika
- 3 T Ground black Pepper
- 3 T Garlic Powder
- 3 T onion Powder
- 2 T dried oregano
- 2 T dried Thyme
- 1 T ground cumin
- 1 T ground coriander
- 2 T Kosher salt
Instructions
Sheet Pan Salmon Instructions
- Preheat your oven to 425 degrees. Line a baking sheet with parchment paper.
- Toss the potatoes and zucchini halves in the olive oil. Place the zucchini on one half of the baking sheet and the potatoes on the other. Leave the center for the salmon. Sprinkle the potatoes and zucchini with a pinch of kosher salt and black pepper. Place in the oven on the center rack for 25 minutes. Take the baking sheet out of the oven.
- Brush the salmon with olive oil on both sides. Sprinkle an even layer of my all-purpose rub on top of the salmon. Add the salmon to the center of the baking sheet. Return to the oven and bake another 12-15 minutes until the salmon is cooked through. Enjoy
- Note: I prefer my fish cooked through but not dry. If you prefer more medium, check it at 12 minutes.
Dr. J's AP Rub Instructions
- Put all ingredients into a mason jar and shake. This rub is great on chicken and pork. This can be stored in your spice cabinet up to a year.
