Buffalo Chicken Meatballs

Ingredients
Meatball Recipe
- 2 lbs. ground chicken
- 1 large egg beaten
- ¾ C panko breadcrumbs plain
- ½ C milk
- 2/3 C pecorino Romano cheese grated
- 2, garlic cloves minced
- ¼ C packed chopped herbs I used ½ parsley and ½ cilantro
- 1 ½ tsp. kosher salt
- ½ tsp. ground black pepper
Buffalo Sauce Recipe
- ¾ C hot sauce I use Valentina’s. Use your favorite
- ½ C or 1 stick butter unsalted
- 2 T brown sugar
- 1 T rice vinegar
- ½ tsp. Worcestershire sauce
- ½ tsp. garlic powder
- ¼ tsp. kosher salt
Ranch Dressing Recipe
- ¾ C mayonnaise I love Duke’s
- ¾ C sour cream
- ¼ to ½ C buttermilk
- ¼ C packed fresh flat leaf Italian parsley and cilantro (½ of each)
- 1 T fresh chives
- 3 leaves fresh basil
- ½ tsp. dried dill
- 1 garlic clove minced
- 1 T rice vinegar
- ¼ tsp. kosher salt
- ¼ tsp. ground black pepper
Instructions
Meatball Instructions
- Preheat your oven to 375 degrees. Line 2 sheet pans with parchment paper or grease with olive oil.
- In a large mixing bowl, add your breadcrumbs and milk. Let this sit for 5 minutes. Now, add the rest of your ingredients. Combine it all together. I use a 1 ½ T ice cream scoop to create my meatballs. Just scoop them onto your prepared sheet pans.
- Bake in the oven for 30 minutes, turning halfway through the cooking time.
- Note: I put both sheet pans in at the same time. I put one on the middle rack and the other on the bottom rack. I switched positions halfway through the cooking time.
- Once they come out of the oven, toss them in the buffalo sauce and enjoy! I serve with my homemade ranch dressing. Recipe below.
Buffalo Sauce Instructions
- Put all the ingredients in a small sauce pan over medium heat. Bring to a simmer and then you’re done. This is such a quick and delicious recipe.
Ranch Dressing Instructions
- In a large mixing bowl, add your mayo and sour cream. Finely chop your parsley, cilantro, basil, chives and then add to the bowl. Now, add your minced garlic, vinegar, dill, salt, and black pepper. Whisk this all together. Add a little buttermilk at a time until you’ve reached your desired consistency. This is so good! Enjoy!
- Note: This will last in your refrigerator up to a week. If it thickens a bit in your refrigerator, thin it out with a little more buttermilk.
