Ingredients

  • 24 pack Hawaiian rolls
  • ½ lb. mortadella Italian, salume made with pork and pistachios, sliced thin
  • ½ lb. capicolo Italian dry-cured, spicy ham, sliced thin
  • ½ lb. Genoa salami Italian salume made with pork, sliced thin
  • ½ lb. picante sharp provolone cheese, sliced thin
  • 6-8 Roma tomatoes sliced thin (you will need 24 slices)
  • Pepperoncini jarred (mild), sliced
  • Red wine vinegar
  • Extra virgin olive oil
  • Kosher salt

Instructions

  • Note: the meats and cheese listed above should be available at your local deli.
  • Preheat your oven to 400 degrees. Line a baking sheet with parchment paper or aluminum foil for easy cleanup.
  • Using a large, serrated knife, slice the Hawaiian rolls in half (leave the rolls attached), creating a top and bottom. Take the entire top off. Place the bottoms on the prepared baking sheet.
  • Start layering the rolls with the mortadella. I like to overlap the meats. Use all the mortadella. Add another layer of capicola and then repeat with the Genoa salami.
  • Top the meat with 24 slices of tomato. Sprinkle the tomatoes with a bit of kosher salt. Don’t skip this step. It will bring out the flavor of the tomatoes.
  • Add a layer of sliced of pepperoncini (as much as you like). Now, add a drizzle of red wine vinegar and olive oil all over the sliders.
  • Finally, top with slices of provolone cheese (overlap each slice). Place the top back on the sliders. Place in the oven on the middle rack until the cheese has just melted. This will take 5-6 minutes.
  • Take the sliders out of the oven and cut into individual sliders. You’re now ready to plate and enjoy!
  • Note: These can be made several hours ahead of time. Just cover and place in the refrigerator before baking them. When you’re ready to serve just take them out of the refrigerator and serve as is or bake in the oven as described above.
