Ingredients
Method
- This pasta salad is so addicting! Cook the pasta according to the directions on the box, then drain and rinse under cold water to stop the cooking process. This is one of the only times that I rinse my pasta. In a large mixing bowl, add the salsa, sour cream, mayonnaise, chili powder, kosher salt, garlic powder and cumin. Mix this all together. Now, add your pasta, cheese, black olives, scallions, celery, and cilantro. Stir this all together and enjoy! Note: The pasta may soak up the dressing if you have leftovers or if it sits a bit. No worries, just add in another ½ C of salsa, ¼ C sour cream and ¼ C mayonnaise to the dish and this will rejuvenate your salad!

If the salad sits or you have leftovers, the pasta can soak up the dressing. To refresh it, add ½ cup salsa, ¼ cup sour cream, and ¼ cup mayonnaise, then stir to combine.
Why rinse the pasta (and the trade-offs)
Draining and rinsing pasta after boiling stops the cooking process and cools it quickly so other ingredients stay crisp. Rinsing also washes away the surface starch released during boiling; that starch helps warm pasta hold on to dressings, so rinsed pasta will be cooler and less sticky and the dressing may cling a bit less. If the salad soaks up dressing as it sits, it can be refreshed by stirring in additional salsa, sour cream, and mayonnaise.
