Pork Chops with Apricot Glaze

Ingredients
- 4, 1- inch-thick boneless pork chops
- 3 T extra virgin olive oil
- ¾ C Apricot preserves
- ½ C white wine I used Chardonnay, you could also substitute chicken broth or stock
- Kosher salt
- Ground black pepper
- Dried thyme leaves
Instructions
- Heat a non-stick skillet over medium high heat, add your oil. While the oil is heating up, sprinkle both sides of your chops with salt, pepper and thyme.
- Place your chops in the pan and cook for 3-4 minutes per side until the internal temperature reaches 140-150. Take the chops out of the pan and let them rest for 5 minutes.
- While the meat is resting, add your wine and apricot jam to the skillet. Let this cook down and reduce to your desired thickness. This should only take a few minutes. Serve over your chops. Enjoy!
