Heat a non-stick skillet over medium high heat, add your oil. While the oil is heating up, sprinkle both sides of your chops with salt, pepper and thyme.
Place your chops in the pan and cook for 3-4 minutes per side until the internal temperature reaches 140-150. Take the chops out of the pan and let them rest for 5 minutes.
While the meat is resting, add your wine and apricot jam to the skillet. Let this cook down and reduce to your desired thickness. This should only take a few minutes. Serve over your chops. Enjoy!
