Italian Dinner Salad with Oranges, Fennel, Endive, Radicchio, & Romaine

Ingredients
Italian-Style Salad Ingredients
- 1 head Romaine lettuce
- ½ head radicchio
- ½ head green leaf lettuce
- 4 small heads of endive
- 1 bulb fennel
- 1 ,15- ounce can mandarin oranges in light syrup drained
Sweet Italian Vinaigrette Ingredients
- ½ C red wine vinegar
- ¾ C extra virgin olive oil
- 1 tsp. dried Italian seasoning
- 1 clove garlic minced
- 2-3 T honey depending on how sweet you like it
- 1 tsp. Dijon mustard
- Pinch of kosher salt
- Pinch of crushed red pepper
Instructions
Italian-Style Salad Recipe
- Note: you can make this salad as large or small as you like. You can also mix different lettuces. You could add in some onion. All is good and completely up to your imagination.
- I always wash my produce when I get home from the grocery store so it’s ready for me.
- You will need a large salad bowl.
- I cut the Romaine lettuce, radicchio, and green leaf lettuce into bite sized pieces. My heads of endive were small, so I just cut them into small circles about ¼ inch thick. If you had larger heads, I would cut them in half first and then into half-moons. This is all up to you. Add all your lettuces, radicchio, and endive to your bowl.
- Cut the fennel in half and save some of the frons. Peel the outer tougher leaves from the bulb. Remove the core by cutting a “V”. Slice each half into thin slices and add to your bowl. Give this all a mix with salad tongs. Now, top with your mandarin oranges. Serve with your favorite salad dressing. I tossed with my homemade Sweet Italian Dressing.
Sweet Italian Vinaigrette Recipe
- Put all ingredients in proper salad dressing jar or a mason jar will work just as well. Shake it all till combined.
