Tortellini with Shrimp and Pesto

Ingredients
- 1 C fresh basil leaves packed full
- 1 large clove garlic
- ½ C parmesan or pecorino romano
- ¼ walnuts
- Kosher salt
- Extra virgin olive oil
Instructions
- In a large mixing or serving bowl, place approximately ½ C of pesto.
- Then, cook the pasta to the package directions (in heavily salted water) or just a few minutes shy…so al dente.
- Using a spider, take the pasta out of the water and add to the pesto.
- Now, put the shrimp in the same boiling water used to cook the pasta. The shrimp will only take 2 ½ to 3 minutes to cook.
- Take the shrimp out using the spider and add to your tortellini and mix.
- I tend to like a lot of pesto, so I start with a ½ C and go from there. You can add a little extra virgin olive oil to loosen it up, if necessary. Enjoy!
