In a large mixing or serving bowl, place approximately ½ C of pesto.
Then, cook the pasta to the package directions (in heavily salted water) or just a few minutes shy…so al dente.
Using a spider, take the pasta out of the water and add to the pesto.
Now, put the shrimp in the same boiling water used to cook the pasta. The shrimp will only take 2 ½ to 3 minutes to cook.
Take the shrimp out using the spider and add to your tortellini and mix.
I tend to like a lot of pesto, so I start with a ½ C and go from there. You can add a little extra virgin olive oil to loosen it up, if necessary. Enjoy!
