Ingredients

Main Ingredients

  • 3 lb. Boneless chuck roast
  • 3 T extra virgin olive oil
  • 2 C low-sodium beef broth
  • 2-3 T Dr. J’s all-purpose seasoning recipe below
  • ½ red onion sliced
  • 1 bay leaf
  • Kosher salt
  • Homemade BBQ sauce

BBQ Sauce Ingredients

  • 1 C ketchup
  • ½ C light brown sugar
  • ÂĽ C apple cider vinegar
  • 2 T honey
  • 1 T Worcestershire sauce
  • 1 T dry mustard
  • 1 tsp. garlic powder
  • 1 tsp. onion powder
  • 1 tsp. smoked paprika
  • 1 tsp. kosher salt
  • 1 tsp. ground black pepper

  • Cut the roast into four equal sized portions. Season liberally with kosher salt. Now, season all sides with all-purpose seasoning.
  • Press sauté’ “normal” on the Instant pot. Add the olive oil to the pot. When the Instant Pot reads “hot”, add half of the beef to the pot and sauté’ till browned on all sides. Take out and set on a plate. Repeat with the rest of the meat.
  • Add the beef broth to the pot and scrape up all the brown bits on the bottom. Hit the cancel button.
  • Place the beef back into the pot along with the bay leaf. Top with the sliced onions.
  • Place the cover on the Instant Pot. Press pressure cook “more”. Set for 60 minutes. When the timer goes off, let the pot natural release for 10 minutes. When 10 minutes is up, press the release valve to let out all the pressure from the pot. Take the cover off and remove the beef to a large bowl. Discard the liquid in the pot. I like to shred my beef using two forks. I also will remove any excess fat at this point. You are now ready to add your BBQ sauce and mix all together (add as much sauce as you enjoy).
  • Note: I like to serve mine on a toasted bun. You could also serve this over rice.

BBQ Sauce Instructions

  • Place all ingredients into a small saucepan. Heat to a boil and then lower to a simmer.
  • Simmer the sauce for 15 minutes.
  • Let this cool completely before serving.
