Ingredients
  

Sweet Potato Gratin Ingredients
  • 3 sweet potatoes peeled and thinly sliced
  • 2 C heavy cream
  • ½ C pecorino Romano cheese grated
  • 2 tsp. Dr. J’s all-purpose spice rub or your favorite
  • ½ tsp. kosher salt
Dr. J's All Purpose Rub Ingredients
  • 2 T smoked paprika
  • 2 T Paprika
  • 3 T Ground black Pepper
  • 3 T Garlic Powder
  • 3 T onion Powder
  • 2 T dried oregano
  • 2 T dried Thyme
  • 1 T ground cumin
  • 1 T ground coriander
  • 2 T Kosher salt

Method
 

Sweet Potato Gratin Instructions
  1. Preheat your oven to 375.
  2. Butter a 8 x 5 casserole dish.
  3. In a small dish, mix the kosher salt and spice rub together.
  4. Layer the bottom of the casserole dish with slices of sweet potato, slightly overlapping each slice.
  5. Sprinkle the top with approximately one-third of the spice rub and pecorino Romano.
  6. Repeat with two more layers. Top with the heavy cream.
  7. Cover with aluminum foil. Bake on the middle rack for 30 minutes. Take the aluminum foil off and cook for another 20-30 until the cream is bubbly and the cheese is slightly browned.
  8. The potatoes should be fork tender. Serve and enjoy!
Dr. J's All Purpose Rub Instructions
  1. Put all ingredients into a mason jar and shake. This rub is great on chicken and pork. This can be stored in your spice cabinet up to a year.
