Fried Green Tomatoes Instructions
- Preheat your oven to 375 degrees. Line a baking sheet with parchment paper for easy cleanup. Add 3-4 T of extra virgin olive oil to the baking sheet and move around to coat the bottom of the pan.
- Set up a dredging station with 3 rimmed dishes: one for flour, one for beaten eggs and one for breadcrumbs.
- Add 1 T spice blend to the dish with the flour and mix thoroughly.
- Add ¼ tsp. kosher salt to the dish with beaten eggs and mix thoroughly with a splash of water.
- Add 2 T spice blend to the dish with the breadcrumbs and mix thoroughly.
- Dredge each tomato into the flour first, turn to coat both sides.
- Next, dip each tomato into the egg mixture, coat on both sides.
- Lastly, place each tomato into the breadcrumbs and press to coat on both sides.
- Transfer the tomatoes to the prepared baking sheet prepared with oil.
- Spray the tops of each tomato with extra virgin olive oil (this will give you a super crunchy texture).
- Note: if you don’t have spray oil, just add more oil to your baking sheet and turn the tomatoes over to coat on the other side.
- Place the sheet in the oven on the middle rack. Bake for 30 minutes total, turning the tomatoes halfway through the cooking time (at 15 minutes).
- Serve and enjoy with my guacamole dipping sauce or your favorite.
