Ingredients

Holiday Ham Ingredients

  • 1, bone-in 8-10 lb. ham pre-cooked
  • ¼ C extra virgin olive oil
  • ¼ C Dr. J’s all-purpose spice rub recipe below or your favorite rub
  • 1, 17.5- ounce jar cherry preserves
  • 1, 6- ounce can pineapple juice no added sugar
  • ¼ C bourbon
  • 2 T honey
  • 2 T Dijon mustard
  • 2 T rice vinegar
  • 1 tsp. pumpkin pie spice
  • ¼ tsp. kosher salt pinch

Cherry, Pineapple, Bourbon Glaze Ingredients

  • 1, 17.5- ounce jar cherry preserves
  • 1, 6- ounce can pineapple juice no sugar added
  • ¼ C bourbon
  • 2 T honey
  • 2 T Dijon mustard
  • 2 T rice vinegar
  • 1 tsp. pumpkin pie spice
  • ¼ tsp. kosher salt pinch

Dr. J's All Purpose Rub Ingredients

  • 2 T smoked paprika
  • 2 T Paprika
  • 3 T Ground black Pepper
  • 3 T Garlic Powder
  • 3 T onion Powder
  • 2 T dried oregano
  • 2 T dried Thyme
  • 1 T ground cumin
  • 1 T ground coriander
  • 2 T Kosher salt

Instructions

Holiday Ham Instructions

  • Preheat your oven to 325 degrees. Prepare a roasting pan with a wire rack.
  • Note: the ham will cook for approximately 15 minutes per pound.
  • Take the ham out of its package and wipe dry with paper towels. Score the ham with a sharp knife about ½ inch apart in a cross-patchwork pattern. I start with cuts going vertical about ¼ inch deep. I then make cuts horizontally.
  • Place the ham cut side down on a cutting board. Pour the olive oil all over the ham. Next, season with the spice rub. Pat the rub into the ham.
  • Place one and half cups of water in the bottom of the roasting pan. Place the ham into the pan (on top of the rack). I like to place an oven safe thermometer into the meat of the ham, avoiding the bone. Cover the ham tightly with aluminum foil. Place in the oven and cook till the thermometer reaches 120 degrees.
  • Take the ham out of the oven and glaze it with half of the cherry, pineapple, bourbon glaze (recipe below). Place the foil back on and place the ham back in the oven till the thermometer reads 140 degrees.
  • Take it out and let it rest for 20 minutes with the foil off. It’s now time to slice and serve with the remainder of the glaze. Enjoy!

Cherry, Pineapple, Bourbon Glaze Instructions

  • Place all the above ingredients into a medium sized saucepan over medium heat. Bring to a boil, reduce heat to a simmer. Cook till the sauce is reduced and it coats the back of a spoon. This will take about 10 minutes once simmering. The glaze will continue to thicken as it cools.
  • Note: this glaze would be delicious with any pork dish or on chicken. Enjoy.

Dr. J's All Purpose Rub Instructions

  • Put all ingredients into a mason jar and shake. This rub is great on chicken and pork. This can be stored in your spice cabinet up to a year.
