Bread Machine Hawaiian Bread

No ratings yet
Soft, slightly sweet Hawaiian bread made with pineapple juice and unsweetened coconut flakes. This easy bread machine recipe makes a 1½-pound loaf—delicious for sandwiches, French toast, or toasted with butter.
Servings: 1 1.5 lb loaf
Course: Bread

Ingredients

  • 1 cup pineapple juice 236 ml
  • 1 large egg lightly beaten
  • 2 tablespoons olive oil 30 ml; or a neutral oil, such as avocado oil
  • 3 cups bread flour 390 g
  • ½ cup unsweetened coconut flakes 35.5 g
  • 3 tablespoons cane sugar 37.68 g
  • ¾ teaspoon kosher salt 4.5 g
  • 2 teaspoons bread machine yeast 5.67 g

Equipment

  • Bread Machine
  • measuring cups and spoons
  • Cooling rack

Method

  1. Measure the ingredients. Spoon the flour into the measuring cup and level it off rather than packing it down.
  2. Add the ingredients to the bread machine pan in the order listed, unless your machine’s manual specifies a different order.
  3. On the KBS machine, select setting 1, Soft Bread, a 1½-pound loaf, and medium crust. For another machine, consult its manual for the corresponding setting, which may be called White Bread.
  4. Press Start and allow the cycle to finish. Dr. J’s KBS cycle takes 3 hours and 11 minutes.
  5. Using oven mitts, carefully remove the pan and turn the loaf onto a cooling rack. Let it cool completely before slicing. Serve and enjoy, or toast a slice and spread it with butter.
