No ratings yet
Soft bread-machine Hawaiian rolls use pineapple juice, coconut flakes, and a lightly sweet dough, then rise in a pan and bake until golden.
Servings: 12 rolls
Course: Bread
Cuisine: American

Ingredients

  • 1 C pineapple juice
  • 1 large egg, lightly beaten
  • 2 T coconut oil or avocado oil
  • 3 C bread flour Source equivalent: approximately 360 g; spoon into the cup and level.
  • ½ C coconut flakes Source equivalent: approximately 40 g.
  • 3 T cane sugar or coconut sugar Source equivalent: approximately 38 g.
  • ¾ tsp. kosher salt Source gives an approximate metric range of 2–3.5 g.
  • 2 tsp. bread-machine yeast Source equivalent: approximately 6 g.
  • cooking spray or softened butter, for preparing the dish The source used coconut oil.
  • melted salted butter, for brushing, optional

Method

  1. Add the pineapple juice, egg, oil, bread flour, coconut flakes, sugar, salt, and bread-machine yeast to the bread-machine pan in the order recommended for your machine.
  2. Select the dough cycle. On Dr. J’s KBS machine, setting 12 (Leavened Dough) takes 1 hour and 24 minutes.
  3. Prepare a 9 × 13-inch casserole dish with cooking spray, softened butter, or coconut oil. When the cycle ends, turn the dough onto a lightly floured surface. Pat or gently roll it into an approximately 9 × 13-inch rectangle.
  4. Cut the dough into three equal long strips, then cut each strip crosswise into four pieces to make 12 portions. Shape each portion into a ball and place the balls in the prepared dish.
  5. Cover the dish with plastic wrap and let the dough rise in a warm area for 1 hour, until the rolls have puffed. During the last 20 minutes, preheat the oven to 375°F (about 190°C).
  6. Remove the plastic wrap and bake on the middle rack for 17–20 minutes, until golden brown.
  7. Brush with melted butter if desired. Serve warm, or cool completely on a baking rack before storing in an airtight container.
