Method
- Cut the eggs in half, lengthwise. Scoop out the yolk and place in a mixing bowl.
- Add to the bowl, mayonnaise, buffalo sauce, honey, and chili powder. Mash this all with a potato masher and then mix smooth with a wooden spoon. You could also use a handheld mixer but I didn’t find it necessary.
- Use a piping bag or a small spoon to fill each egg with the spicey sweet mixture.
- Top each egg with a sprinkle of crumbled blue cheese and chopped chives.
