Ingredients
  

  • 6 hard boiled eggs
  • 3 T mayonnaise I used Duke’s
  • 1 T Buffalo/wing sauce your favorite brand
  • ½ T honey I like mine with a touch of sweetness
  • 1/8 tsp. ancho chili powder
  • Blue cheese crumbles to top
  • Chives chopped, dried or fresh (I used dried)

Method
 

  1. Cut the eggs in half, lengthwise. Scoop out the yolk and place in a mixing bowl.
  2. Add to the bowl, mayonnaise, buffalo sauce, honey, and chili powder. Mash this all with a potato masher and then mix smooth with a wooden spoon. You could also use a handheld mixer but I didn’t find it necessary.
  3. Use a piping bag or a small spoon to fill each egg with the spicey sweet mixture.
  4. Top each egg with a sprinkle of crumbled blue cheese and chopped chives.
