Instant Pot Tortellini Recipe
Serves: 6
12-ounce bag dried tortellini (I used Barilla)
28-ounce can fire roasted diced tomatoes
½ C red wine (I used Cabernet) *you could just omit and use water
½ C water
1 ½ tsp. dried Italian spice
1 tsp. kosher salt
¾ tsp. ground garlic
2 bay leaves, dried
*I use an 8-quart Instant Pot for all my recipes.
Put all the above ingredients into your Instant Pot and give it all a stir. Place the cover on top and seal. Set your Pot to Pressure cook (manual High). Set the time for 10 minutes. It will take approximately 10 minutes to come to pressure and 10 minutes to cook. Once the timer goes off, press the release valve, and let all the steam release. The pin will drop and now it’s safe to open your Instant Pot. Give it all a stir, serve, and enjoy! I love to top with fresh basil ribbons and some grated pecorino Romano or parmigiana cheese.
*This is an absolute go to recipe for me during the week. I can put together a side salad while the pasta is cooking and boom….dinner is on the table.
