Sheet Pan Instructions
- Preheat your oven to 425 degrees. Line a sheet pan with parchment paper.
- Peel and dice your potatoes into ½ “dices. Peel your onions, cut in half and then cut each half into quarters.
- Prick each sausage with a fork 4-5 times.
- Add your onions and potatoes into a large bowl, coat with 2 T of the olive oil, and the all-purpose rub. Place the veggies on the prepared baking sheet. Place in the oven and bake for 20 minutes. Take the pan out of the oven.
- Coat the sausages in the remaining 1 T of olive oil. Place the sausages on the other half of the baking sheet. Place back in the oven and roast for another 25 minutes.
- When done, take the pan out of the oven, pour the lime juice and zest over the veggies and give it a mix. Serve and enjoy!
Dr. J's All Purpose Rub Recipe
- Put all ingredients into a mason jar and shake. This rub is great on chicken and pork. This can be stored in your spice cabinet up to a year.
