Heat the olive oil in a large skillet over medium high heat. Add the shrimp and season with the all-purpose seasoning.
Cook 1 ½ minutes per side. Take out and put on a plate to cool.
Cook the farro to package directions and put in a large bowl.
To make the lime dressing: In a small mixing bowl, add your lime juice, rice vinegar, olive oil, honey, salt, and black pepper. Whisk it all together.
Next, add the mango, peppers, scallions, jalapeno, and cilantro to your farro and give it all a stir.
Pour the lime dressing over the top. Mix it all together.
