Slow Cooker Chicken Cacciatore

  • 2 lbs. boneless skinless, chicken thighs
  • 1 onion diced
  • 1 bell pepper any color, diced
  • 8- ounces white button mushroom sliced
  • 2 cloves garlic minced
  • 28- ounce can San Marzano whole tomatoes (or a jar of your favorite tomato sauce)
  • ¾ C low-sodium chicken broth (or just add more sauce
  • 2 T tomato paste
  • ½ T cane sugar
  • 2 ½ tsp. Italian seasoning
  • 1 tsp. kosher salt more for seasoning the chicken
  • ½ tsp. ground black pepper more for seasoning the chicken
  • ½ tsp. crushed red pepper optional (we like it a bit spicy)
  • 1 bay leaf
Toppings (optional)
  • Flat leaf parsley chopped
  • Pecorino Romano Cheese grated

Method
 

  1. This is so delicious, quick and easy! This is on our monthly rotation.
  2. Pour the whole tomatoes or sauce into the pot of your slow cooker. If using whole tomatoes, crush them a bit with a wooden spoon or spatula (we like our sauce chunky).
  3. Next, add in the rest of the ingredients, except the chicken: onions, peppers, mushrooms, garlic, chicken broth, tomato paste, Italian seasoning, sugar, salt, pepper and bay leaf. Give this a stir to combine.
  4. Nestle the chicken thighs into the pot. Season the chicken with an additional teaspoon of kosher salt and half a teaspoon of ground black pepper.
  5. Place the lid on the slow cooker and set for 4-5 hours on low or 2-2 ½ hours on high.
  6. Serve over pasta, rice or polenta. Enjoy!
  7. I served mine over cooked penne pasta. Cook to package directions and top with your cacciatore, parsley and grated cheese. Oh, so good!
  8. Note: My slow cooker tends to cook things quickly. My chicken was perfectly cooked in 4 hours on low.
