No ratings yet
A savory breakfast casserole combines seasoned eggs, crumbled breakfast sausage, cheddar cheese, and a crisp topping of tater tots.
Servings: 8 servings
Course: Breakfast
Cuisine: American

Ingredients

  • 12 large eggs
  • 2 T avocado oil
  • 8 ounces breakfast sausage
  • 1 20-ounce bag frozen tater tots
  • 2 C shredded cheddar cheese
  • ½ C milk
  • ¾ tsp. dried Italian seasoning
  • ½ tsp. garlic powder
  • ½ tsp. kosher salt
  • ¼ tsp. ground black pepper
  • butter, for greasing the casserole dish
  • sour cream, hot sauce, and sliced scallions, optional toppings

Method

  1. Preheat the oven to 350°F. Butter a 9 × 13-inch casserole dish.
  2. Heat a skillet over medium-high heat and add the avocado oil. When hot, add the breakfast sausage. Cook for 7–8 minutes, breaking it into crumbles, until cooked through. Remove from the heat and let it cool slightly.
  3. In a large mixing bowl, whisk together the eggs, milk, Italian seasoning, garlic powder, kosher salt, and black pepper. Stir in the cheddar cheese.
  4. Pour the egg mixture into the prepared casserole dish. Sprinkle the sausage evenly over the egg mixture, then arrange the tater tots on top.
  5. Bake on the middle rack for 50 minutes to 1 hour, until the eggs are set and no liquid egg remains.
  6. Let the casserole rest for 5 minutes before serving. Add sour cream, hot sauce, and scallions if desired.
