Ingredients
  

  • 5 C cooked turkey breast diced (you could also use a mix with dark meat)
  • 1 C celery small dice
  • ¾ C chopped walnuts
  • ¾ C dried blueberries
  • ¾ C scallions sliced thinly
  • 8- ounces gouda cheese small dice
  • 4 slices thick cooked bacon, small dice
  • ½ C mayonnaise I love Duke’s
  • 3 T Dijon mustard
  • 1 T honey
  • 1 T rice vinegar
  • ½ T dried parsley
  • ¾ tsp. kosher salt
  • ½ tsp. ground black pepper

Method
 

  1. Note: This recipe is a great way to use up leftover turkey!
  2. Add the mayo, Dijon, honey, rice vinegar, parsley, salt and pepper to a large mixing bowl. Whisk till combined.
  3. Now, add the diced turkey, celery, walnuts, blueberries, scallions, gouda, and bacon to the bowl. Mix it all together. Serve and enjoy!
  4. Note: This salad is great on any of your favorite bread to make a sandwich. You can also serve this in lettuce cups or on top of regular salad.
