Servings: 2
Ingredients
- 10- ounce bag frozen sea scalloped defrosted
- 2 T unsalted butter
- 1-2 T extra virgin olive oil
- Kosher salt
- Ground black pepper
Instructions
- Heat a cast iron skillet over medium high heat.
- Dry your scallops well between paper towels. You want to get all the moisture out so they will brown in the pan. Season the scallops with salt and pepper on both sides.
- Add your butter and oil to your hot skillet. Now, add your scallops and don’t move them around. This is the hard part. Just let them cook 2 minutes per side. They will get brown and caramelized. Now, you’re ready to eat. Enjoy!
- Note: These are a great weeknight meal! They cook in just minutes. You could add a squeeze of lemon, capers, or dill. These are great just over a salad.
