Homemade Chicken Soup

Ingredients
  

  • 2 precooked boneless chicken breasts skinless, cubed
  • 1/2 medium onion diced
  • 3 large carrots cut in half or quarters and sliced
  • 2 celery stalks cut in half and diced
  • 2 garlic cloves minced
  • 2 bay leaves
  • 3 Quarts low sodium chicken stock
  • 2 T chicken bouillon paste
  • 6-8 ounces of your favorite pasta I love pastina
  • Salt and pepper to taste
  • chopped fresh parsley as much as you like

Method
 

  1. Use your favorite soup pot, approximately 6 quart size.
  2. Heat enough olive oil to coat the bottom of your pan over medium high heat.
  3. Once barely smoking, add your onions, carrots and celery, cook till soft approximately 8-10 minutes.
  4. Once veggies are soft, add the minced garlic and bay leaves, cook for about 1 to 2 minutes.
  5. Then add chicken stock and bouillon, bring to a boil.
  6. Add pastina and cook for 5 minutes, remove from heat add in your cooked chicken and parsley.
  7. Now, you’re ready to eat, I like to squeeze a little lemon and add some pecorino romano or parmesan on the soup.
