Ingredients

  • 1 lb. large shrimp peeled and deveined
  • 2 T extra virgin olive oil
  • 2 tsp. all-purpose seasoning
  • 1 C cooked farro
  • ½ large mango diced
  • ½ medium red bell pepper diced
  • 3 scallions sliced thinly, whites and greens
  • ½ jalapeno seeds removed, chopped finely
  • ½ bunch cilantro chopped
  • 1 lime juiced
  • 2 T rice vinegar
  • ¼ C extra virgin olive oil
  • 2 T honey
  • ½ tsp. kosher salt
  • ½ tsp. ground black pepper

Instructions

  • Heat the olive oil in a large skillet over medium high heat. Add the shrimp and season with the all-purpose seasoning.
  • Cook 1 ½ minutes per side. Take out and put on a plate to cool.
  • Cook the farro to package directions and put in a large bowl.
  • To make the lime dressing: In a small mixing bowl, add your lime juice, rice vinegar, olive oil, honey, salt, and black pepper. Whisk it all together.
  • Next, add the mango, peppers, scallions, jalapeno, and cilantro to your farro and give it all a stir.
  • Pour the lime dressing over the top. Mix it all together.
