Ingredients
- 1 lb. large shrimp peeled and deveined
- 2 T extra virgin olive oil
- 2 tsp. all-purpose seasoning
- 1 C cooked farro
- ½ large mango diced
- ½ medium red bell pepper diced
- 3 scallions sliced thinly, whites and greens
- ½ jalapeno seeds removed, chopped finely
- ½ bunch cilantro chopped
- 1 lime juiced
- 2 T rice vinegar
- ¼ C extra virgin olive oil
- 2 T honey
- ½ tsp. kosher salt
- ½ tsp. ground black pepper
Instructions
- Heat the olive oil in a large skillet over medium high heat. Add the shrimp and season with the all-purpose seasoning.
- Cook 1 ½ minutes per side. Take out and put on a plate to cool.
- Cook the farro to package directions and put in a large bowl.
- To make the lime dressing: In a small mixing bowl, add your lime juice, rice vinegar, olive oil, honey, salt, and black pepper. Whisk it all together.
- Next, add the mango, peppers, scallions, jalapeno, and cilantro to your farro and give it all a stir.
- Pour the lime dressing over the top. Mix it all together.
