Mini Turkey Meatloaves (Asian Style)

Mini Turkey Meatloaves (Asian Style)
Ingredients
Method
- Preheat your oven to 425 degrees for mini loaves or 350 degrees for one big loaf. Grease your mini pans with extra virgin olive oil or a cooking spray.
- *If making one big loaf, use a rimmed baking sheet lined with parchment paper. Shape your loaf so it’s about 2 ½ inches high. Cook for about 1 hour or until an instant read thermometer inserted into the center of the loaf reads 160 degrees.
- Dice your onion into small dices. Preheat a small skillet with 2 T of extra virgin olive oil over medium heat. Once hot, add your onion and sauté until softened. This will take 7-8 minutes. Set the onion aside to cool.
- In a large mixing bowl, add your breadcrumbs and milk. Let this soak for at least 5 minutes. After 5 minutes, add your eggs, onion, carrots, garlic, cilantro, ground turkey, coriander, Chinese five spice, salt, and pepper. Mix this all together until well combined.
- Fill your 8 mini loaf pans and top with the Asian BBQ sauce. Bake on the middle rack of your oven for 25 minutes. Take out and let cool for 5 minutes.
- Mix all the ingredients together until well combined. This is so good! This would be great on any BBQ meat.
- *note: I used 2 tsp. of the chili crisp since Eric and I like things spicy.

Let us know how it was! What makes these Asian-style mini turkey meatloaves
The Asian character comes from pantry sauces and spices that layer sweet, savory, fermented, and spicy notes. Hoisin brings sweet umami and a glossy, savory base for the glaze; gochujang adds fermented chili depth and a touch of sweetness; tamari (or soy) supplies salty umami; and chili crisp, when used, contributes concentrated heat and crunchy chili pieces. Ground coriander, Chinese five‑spice, and fresh cilantro add warm, aromatic accents that complement the ground turkey.
Why sauté the onion and soak the panko
Sautéing the diced onion softens it and mellows raw sharpness so the meatloaf has a balanced onion flavor without noticeable raw onion pieces. Cooking the onion first also reduces excess raw moisture from the onion. Soaking the panko in milk creates a simple panade: hydrated breadcrumbs blend into the meat and help the finished loaves stay tender without packing into a dense texture. The eggs in the mixture then act as a binder so the loaves set as they bake.
Mini loaves vs. one big loaf: practical differences
Smaller individual loaves expose more surface area relative to their volume, so they brown more and cook through faster. A single, larger loaf has a smaller surface‑to‑volume ratio and therefore takes longer to reach a cooked center; shaping that loaf to the suggested height and using a rimmed baking sheet helps the center come to temperature more evenly. For that reason, the smaller loaves use a higher oven temperature for a shorter bake while a single loaf is baked at a lower temperature for longer to avoid overbrowning the exterior before the center is done.
