Ingredients
- 2 ½ C old fashioned oats
- 1 C almond butter
- 2/3 C maple syrup
- ½ C white chocolate chips
- ½ C diced dried apricots
- ¼ C mixture of chia seeds and sunflower seeds
- 2 tsp. pure vanilla extract
- 2 tsp. pumpkin pie spice
- ½ tsp. kosher salt
Instructions
- Put all ingredients in a large mixing bowl. Mix until all is combined.
- Put the bowl in the refrigerator for 30 minutes so they will be easier to form into balls.
- Line a baking sheet with parchment.
- Use a 1 tablespoon cookie scoop to create balls.
- Place on the baking sheet and refrigerate to firm up.
- Place in an airtight container.
- These will last in the refrigerator for up to 2 weeks. They also freeze well for up to 3 months.
