Ingredients

  • 2 ½ C old fashioned oats
  • 1 C almond butter
  • 2/3 C maple syrup
  • ½ C white chocolate chips
  • ½ C diced dried apricots
  • ¼ C mixture of chia seeds and sunflower seeds
  • 2 tsp. pure vanilla extract
  • 2 tsp. pumpkin pie spice
  • ½ tsp. kosher salt

Instructions

  • Put all ingredients in a large mixing bowl. Mix until all is combined.
  • Put the bowl in the refrigerator for 30 minutes so they will be easier to form into balls.
  • Line a baking sheet with parchment.
  • Use a 1 tablespoon cookie scoop to create balls.
  • Place on the baking sheet and refrigerate to firm up.
  • Place in an airtight container.
  • These will last in the refrigerator for up to 2 weeks. They also freeze well for up to 3 months.
