Ingredients
  

Buffalo Shrimp Ingredients
  • 1 lb. shrimp peeled and deveined (dry off with paper towel)
  • ¼ C Dr. J’s buffalo sauce recipe below (or your favorite store brand)
  • ¼ C feta cheese crumbled (more if you like)
  • 1 large or 2 medium sweet potatoes peeled and cut into bite-sized chunks
  • 1 head broccoli cut into bite-sized pieces (I used a 9-ounce bag organic broccoli)
  • Extra virgin olive oil
  • ¾ tsp. Dr. J’s all-purpose seasoning recipe below or your favorite seasoning
  • Kosher salt
  • Ground black pepper
Dr. J's Buffalo Sauce Ingredients
  • ¾ C hot sauce your favorite, I love Valentina
  • 1 stick unsalted butter
  • 3 T light brown sugar
  • 1 T rice vinegar
  • ½ tsp. Worcestershire sauce
  • ½ tsp. garlic powder
  • ¼ tsp. kosher salt
Dr. J's All Purpose Rub Ingredients
  • 3 T Ground black Pepper
  • 3 T Garlic Powder
  • 3 T onion Powder
  • 2 T Kosher salt
  • 2 T smoked paprika
  • 2 T Paprika
  • 2 T dried oregano
  • 2 T dried Thyme
  • 1 T ground cumin
  • 1 T ground coriander

Method
 

Buffalo Shrimp Instructions
  1. Preheat your oven to 425 degrees. Line a baking sheet with parchment paper.
  2. Place your cut sweet potatoes into a medium-sized bowl. Add 2-3 T of olive oil, all-purpose seasoning, ½ tsp. kosher salt and ¼ tsp. ground black pepper. Stir to coat the potatoes. Place the potatoes on one side of the baking sheet. Place in the oven for 19 minutes.
  3. Place the broccoli in the mixing bowl. Toss with 2 T of olive oil, ¼ tsp. kosher salt and ¼ tsp. ground black pepper.
  4. When the 19 minutes is up, take the potatoes out of the oven and give them a toss on the sheet. Push the potatoes to the side, so they are only taking up 1/3 of the baking sheet.
  5. Now, add the broccoli to the middle of the sheet pan. Place the sheet pan back in the oven. Set the time for 16 minutes.
  6. Place the shrimp in the mixing bowl. Toss with 2 T of olive oil, ¼ tsp kosher salt and ¼ tsp. ground black pepper.
  7. When the 16 minutes is up, take the potatoes and broccoli out of the oven. Give the broccoli a toss.
  8. Add the shrimp in a single layer onto the remaining 1/3 of the sheet pan. Place in the oven and cook for a final 6-7 minutes until the shrimp are cooked through.
  9. Take the sheet pan out of the oven. Add your buffalo sauce to the shrimp directly on the sheet pan. Give it a toss. Finally, sprinkle the feta cheese over the shrimp and serve. Enjoy!
Dr. J's Buffalo Sauce Instructions
  1. Note: This recipe will make more buffalo sauce than you need for the sheet pan recipe above. I recommend that you make the full sauce recipe. It freezes well. I’m positive you will want this for a future meal.
  2. Put all ingredients in a saucepan over medium low heat. Heat till warmed through and all butter and sugar have dissolved. This is super delicious! Just the right amount of heat and sweet!
Dr. J's All Purpose Seasoning Instructions
  1. Put all ingredients into a mason jar and shake. This seasoning is good on vegetables, chicken, fish, pork or steak. This will last in your spice cabinet up to six months. Enjoy!
