- Preheat your oven to 425 degrees.
- Preheat a 12-inch cast iron skillet over medium high heat. Once hot, add in the olive oil, diced onions along with a pinch of kosher salt and ground black pepper. Cook 3-5 minutes until the onions have softened.
- Add in the butter, garlic, Italian seasoning, salt, pepper and bay leaf. Give this all a stir until butter has melted.
- Sprinkle in the flour and whisk or stir continuously for 2 minutes until the flour has had time to cook.
- Slowly, poor in your chicken broth while whisking to avoid any clumps. Let this come up to a bubble and continue to cook for 2 minutes.
- Shut off the heat.
- Stir in the veggies and chicken. Top with a single layer of tots. Place in the preheated oven on the middle rack.
- Cook according to package directions for the tots. My tot pie took 25 minutes. Take out of the oven and let it rest for 5 minutes (if you can wait that long). Serve and enjoy!
- Note: you could top with chives, parsley, shredded cheese and sour cream (all optional)
