Preheat your oven to 425 degrees.
Preheat a 12-inch cast iron skillet over medium high heat. Once hot, add in the olive oil, diced onions along with a pinch of kosher salt and ground black pepper. Cook 3-5 minutes until the onions have softened.
Add in the butter, garlic, Italian seasoning, salt, pepper and bay leaf. Give this all a stir until butter has melted.
Sprinkle in the flour and whisk or stir continuously for 2 minutes until the flour has had time to cook.
Slowly, poor in your chicken broth while whisking to avoid any clumps. Let this come up to a bubble and continue to cook for 2 minutes.
Shut off the heat.
Stir in the veggies and chicken. Top with a single layer of tots. Place in the preheated oven on the middle rack.
Cook according to package directions for the tots. My tot pie took 25 minutes. Take out of the oven and let it rest for 5 minutes (if you can wait that long). Serve and enjoy!
Note: you could top with chives, parsley, shredded cheese and sour cream (all optional)
