- Preheat your oven to 425 degrees.
- Preheat a 12-inch cast iron skillet over medium high heat. Once hot, add in the olive oil, diced onions along with a pinch of kosher salt and ground black pepper. Cook 3-5 minutes until the onions have softened.
- Add in the butter, garlic, Italian seasoning, salt, pepper and bay leaf. Give this all a stir until butter has melted.
- Sprinkle in the flour and whisk or stir continuously for 2 minutes until the flour has had time to cook.
- Slowly, poor in your chicken broth while whisking to avoid any clumps. Let this come up to a bubble and continue to cook for 2 minutes.
- Shut off the heat.
- Stir in the veggies and chicken. Top with a single layer of tots. Place in the preheated oven on the middle rack.
- Cook according to package directions for the tots. My tot pie took 25 minutes. Take out of the oven and let it rest for 5 minutes (if you can wait that long). Serve and enjoy!
- Note: you could top with chives, parsley, shredded cheese and sour cream (all optional)

Let us know how it was!How this tater tot chicken pot pie comes together
This tater tot chicken pot pie relies on a few key techniques that build a smooth, flavorful filling and a crisp tot topping.
- Roux: Sprinkling flour into melted butter and cooking briefly creates a roux, which thickens the sauce and removes a raw flour taste.
- Whisking as broth is added: Adding the broth while whisking disperses the roux so the sauce develops an even, lump-free texture as it heats.
- Bringing the sauce to a bubble: A short simmer activates the thickening power of the roux and concentrates flavor before the chicken and vegetables are folded in.
- Adding cooked chicken off the heat: Stirring in pre-cooked rotisserie chicken after the heat is off keeps the chicken tender since it does not need further cooking.
- Defrosted frozen vegetables: Using defrosted mixed vegetables reduces excess liquid that can thin the filling.
- Tots and timing: A single layer of tater tots gives room for browning, and using the package cooking time helps the tots reach their intended texture while the filling finishes in the oven. Letting the finished dish rest briefly allows the sauce to set so portions hold together better.
Toppings and finishing flavors
- Chives or parsley: Add a fresh, bright note to cut through the richness.
- Shredded cheese: Contributes extra richness and melting saltiness.
- Sour cream: Provides a cool, tangy contrast to the creamy filling.
