Ingredients
  

  • 1 ½ C milk warm (95-105 degrees) (360 mL)
  • ¼ C unsalted butter melted (60 mL)
  • 3 ½ C whole wheat flour (about 420 g)
  • ¼ C light brown sugar (about 55 g)
  • 2 T Vital Wheat Gluten (30 mL)
  • 1 ½ tsp. kosher salt (7.5 mL)
  • 1 ½ tsp. bread machine yeast (7.5 mL)

Method
 

  1. Place the ingredients in the pan of your bread machine in the order listed above.
  2. Set to 1 ½ pound loaf, soft bread, medium crust. This bakes for 3 hours and 11 minutes in my machine.
  3. When done, turn it out onto a cooling rack to cool completely before slicing.
  4. This bread will last 3-4 days on your counter in a zip loc bag. You can also freeze this bread for up to 2 months.
  5. Note: For a fluffy loaf, spoon your flour into your measuring cups and then level off.
  6. The vital wheat gluten will give your bread the elasticity and chew that will keep you going back for another slice.

Why this bread uses vital wheat gluten

The ingredient list includes 2 tablespoons of vital wheat gluten. Vital wheat gluten is a concentrated wheat protein that strengthens the dough’s gluten network. In 100% whole wheat loaves, bran and germ particles interrupt gluten development and can make the crumb denser; added gluten helps the dough rise more reliably and gives a lighter, chewier texture without changing the bread’s flavor.
