No Bake Pumpkin Spiced Energy Balls

These No-Bake Energy Balls with Apricots and White Chocolate are a sweet and energizing snack that's quick to prepare and full of flavor. Ingredients
  

  • 2 ½ C old fashioned oats
  • 1 C almond butter
  • 2/3 C maple syrup
  • ½ C white chocolate chips
  • ½ C diced dried apricots
  • ¼ C mixture of chia seeds and sunflower seeds
  • 2 tsp. pure vanilla extract
  • 2 tsp. pumpkin pie spice
  • ½ tsp. kosher salt

Method
 

  1. Put all ingredients in a large mixing bowl. Mix until all is combined.
  2. Put the bowl in the refrigerator for 30 minutes so they will be easier to form into balls.
  3. Line a baking sheet with parchment.
  4. Use a 1 tablespoon cookie scoop to create balls.
  5. Place on the baking sheet and refrigerate to firm up.
  6. Place in an airtight container.
  7. These will last in the refrigerator for up to 2 weeks. They also freeze well for up to 3 months.
