“Waldorf” Chicken Salad

Ingredients
- 2 cooked boneless skinless chicken breasts cubed
- 1 Apple your favorite diced and sprinkled with some lemon juice
- a handful of seedless grapes cut in half red or green
- 2 stalks of celery small diced
- 2 scallions sliced up into small pieces
- 1/3 cup of cashews chopped
- 1/2 cup of your favorite herbs or what you have in your fridge I used a mixture of cilantro, flat leaf parsley and dill…..delish
- 1/3 of a cup of mayo
- 1/3 of a cup sour cream
- squeeze of lemon
- pinch of salt and pepper
Instructions
