Ingredients

2 cooked boneless skinless chicken breasts cubed
1 Apple your favorite diced and sprinkled with some lemon juice
a handful of seedless grapes cut in half red or green
2 stalks of celery small diced
2 scallions sliced up into small pieces
1/3 cup of cashews chopped
1/2 cup of your favorite herbs or what you have in your fridge I used a mixture of cilantro, flat leaf parsley and dill.....delish
1/3 of a cup of mayo
1/3 of a cup sour cream
squeeze of lemon
pinch of salt and pepper

Method

Mix it all together and enjoy by itself or on your favorite bread for a delicious sammie.
