Tater Tot Breakfast Casserole

Tater tot breakfast casserole baked in a rectangular casserole dish.

Tater tot breakfast casserole layers crumbled breakfast sausage and cheddar into a seasoned egg mixture, then tops it with a golden layer of crisp-edged tater tots. It’s a hearty oven-baked breakfast made with familiar ingredients, and the casserole format makes it easy to bring the whole meal to the table at once.

The sausage cooks first on the stovetop, while the eggs, milk, Italian seasoning, garlic powder, salt, and pepper are whisked together in a bowl. After assembling the layers, bake until the eggs are set throughout. Serve it as written or add sour cream, hot sauce, and scallions at the table for extra flavor.
