Ingredients
  

  • 1 8.5 ounce box Jiffy Corn Muffin Mix
  • 1 15 ounce can whole kernel corn drained
  • 1 15 ounce can creamed corn do not drain
  • 8 ounces sour cream
  • 1 stick salted butter ½ C, melted
  • 1 7-ounce can diced green chiles mild
  • 1 T sugar optional
  • 1 C shredded Monterey Jack and Colby mix to top

Method
 

  1. Preheat your oven to 350 degrees. Prepare a 2 ½ - 3-quart casserole dish with a light cooking spray or butter.
  2. Mix all the ingredients in a large bowl (except the shredded cheese). Pour into your prepared casserole dish.
  3. Bake on the middle rack of the oven for 55 minutes, until almost set in the middle.
  4. Take out of the oven and top with the shredded cheese. Bake another 10 minutes.
  5. Serve and enjoy!
  6. Note: This is such a delicious combination of savory and sweet.
