What is corn casserole (and how it differs from corn pudding)

Corn casserole is a baked side made from whole-kernel corn, creamed corn, a cornbread mix, and dairy for a creamy, slightly custardy result with cornbread flavor. It sits between a loose corn pudding and a quick cornbread: more structure than a pudding because of the corn-mix binder, but softer and moister than a dry quick-bread.

Why these ingredients matter

The casserole’s ingredients each contribute to texture and flavor:

  • Creamed corn (do not drain): supplies much of the moisture and the creamy body; the liquid in creamed corn helps produce a tender, custardy interior.
  • Whole-kernel corn (drained): provides bursts of corn texture so the finished dish isn’t uniformly smooth.
  • Jiffy corn muffin mix: acts as the binder and brings a familiar cornbread flavor, thickening the mixture so the casserole holds together when sliced.
  • Sour cream: adds creaminess and a touch of tang that balances the corn’s sweetness and helps keep the interior moist.
  • Butter: contributes richness and promotes slight browning on the surface; using melted butter helps distribute fat evenly through the batter for a consistent texture.
  • Diced green chiles and optional sugar: the chiles give a mild savory lift; the small amount of sugar, when used, enhances the corn’s natural sweetness.

This is my favorite holiday side dish! The corn is so sweet and I love how you added the chilis for just a touch of heat. Perfection!
