Orange, Fennel Coleslaw Recipe
Serves: 6-8
Ingredients:
1, 14-ounce bag coleslaw
1 bulb fennel
1, 15-ounce can mandarin oranges, drained
½ C mayonnaise
2 T rice vinegar
2 T sugar
1 tsp. ground mustard
½ tsp. celery seed
½ tsp. kosher salt
Peel the outside of the fennel, cut out the core. Slice the fennel into 1/8-inch slices.
In a large bowl, add the mayonnaise, rice vinegar, sugar, ground mustard, celery seed and salt. Whisk this all together. Add in the coleslaw mix, mandarin oranges and fennel. Mix it all together.
Optional: Chop up 3 tablespoons of fennel fronds and add to the mix.
