Set your Instant Pot to sauté normal. When hot, add your brats and sear on all sides for 5-7 minutes. Remove from the pot. Add in your onions and sauté 2-3 minutes until just tender. Hit cancel.
Now, add your peppers, beer, vinegar, bay leaf, salt, and black pepper. Give it all a stir. Add your brats back into the pot. Place the top and lock. Make sure the vent is sealed.
Set to pressure cook, “more” for 6 minutes. When the timer goes off, let it natural release for 5 minutes. Hit cancel. Release the remaining pressure. Take the cover off and enjoy!
I served mine in a sub roll with some stone ground mustard. This recipe is so simple but delicious!
Note: I use an 8-quart Instant pot for all my recipes.
