- 1 lb. elbow macaroni
- 1 ½ C salsa your favorite
- 8- ounces sharp cheddar cheese cubed
- ½ C sour cream
- ½ C mayonnaise
- 1 C corn
- 4- ounces canned black olives sliced
- 5 scallions sliced
- 2 celery stalks diced
- ½ C cilantro chopped
- 1 tsp. chili powder
- 1 tsp. kosher salt
- ½ tsp. garlic powder
- ½ tsp. ground cumin
This pasta salad is so addicting! Cook the pasta according to the directions on the box, then drain and rinse under cold water to stop the cooking process. This is one of the only times that I rinse my pasta.In a large mixing bowl, add the salsa, sour cream, mayonnaise, chili powder, kosher salt, garlic powder and cumin. Mix this all together. Now, add your pasta, cheese, black olives, scallions, celery, and cilantro. Stir this all together and enjoy! Note: The pasta may soak up the dressing if you have leftovers or if it sits a bit. No worries, just add in another ½ C of salsa, ¼ C sour cream and ¼ C mayonnaise to the dish and this will rejuvenate your salad!
