Homemade Potato Salad

Ingredients
- 1.5 lbs. baby Yukon gold potatoes washed and halved
- 4 sliced cooked bacon crumbled
- 3 eggs hard boiled and chopped
- 4 scallions whites and greens, sliced
- ½ C mayonnaise
- ¼ C parsley loosely packed, chopped
- 3 T sweet relish
- 2 T Dijon mustard
- ½ T rice vinegar
- ¼ tsp. dried dill
- ½ tsp. ground black pepper
Instructions
- Note: once you mix your potato salad, taste for seasoning. You can add more salt or pepper to satisfy your taste. The potatoes are cooked in salted water but they can handle a bit of salt.
- Place potatoes in a large sauce pan with cold salted water (approx. 1 T kosher salt). Make sure that the potatoes are covered by 2 inches of water. Bring to a simmer and cook for 15-18 minutes, until a fork goes into the potatoes with no resistance. Immediately drain the potatoes.
- While the potatoes are cooling a bit. Mix the sauce in a large bowl. Add in your mayonnaise, Dijon, relish, vinegar, parsley, dill, salt, and black pepper.
- Now, add your potatoes, crumbled bacon and chopped eggs to the bowl. Give it all a good mix. Taste for seasoning. This is when you may want to add another pinch of salt or black pepper. This is truly one of my favorite potato salads.
