Ingredients

Sheet Pan Ingredients

  • 5 Hot Italian Sausages
  • 1 large or 2 medium sweet potatoes
  • 2 medium onions
  • 3 T extra virgin olive oil
  • 2 tsp. Dr. J’s all-purpose rub recipe below or your favorite
  • ½ lime juiced and zested

All Purpose Rub Ingredients

  • 2 T smoked paprika
  • 2 T Paprika
  • 3 T Ground black Pepper
  • 3 T Garlic Powder
  • 3 T onion Powder
  • 2 T dried oregano
  • 2 T dried Thyme
  • 1 T ground cumin
  • 1 T ground coriander
  • 2 T Kosher salt

Instructions

Sheet Pan Instructions

  • Preheat your oven to 425 degrees. Line a sheet pan with parchment paper.
  • Peel and dice your potatoes into ½ “dices. Peel your onions, cut in half and then cut each half into quarters.
  • Prick each sausage with a fork 4-5 times.
  • Add your onions and potatoes into a large bowl, coat with 2 T of the olive oil, and the all-purpose rub. Place the veggies on the prepared baking sheet. Place in the oven and bake for 20 minutes. Take the pan out of the oven.
  • Coat the sausages in the remaining 1 T of olive oil. Place the sausages on the other half of the baking sheet. Place back in the oven and roast for another 25 minutes.
  • When done, take the pan out of the oven, pour the lime juice and zest over the veggies and give it a mix. Serve and enjoy!

Dr. J's All Purpose Rub Recipe

  • Put all ingredients into a mason jar and shake. This rub is great on chicken and pork. This can be stored in your spice cabinet up to a year.
