- This is so delicious, quick and easy! This is on our monthly rotation.
- Pour the whole tomatoes or sauce into the pot of your slow cooker. If using whole tomatoes, crush them a bit with a wooden spoon or spatula (we like our sauce chunky).
- Next, add in the rest of the ingredients, except the chicken: onions, peppers, mushrooms, garlic, chicken broth, tomato paste, Italian seasoning, sugar, salt, pepper and bay leaf. Give this a stir to combine.
- Nestle the chicken thighs into the pot. Season the chicken with an additional teaspoon of kosher salt and half a teaspoon of ground black pepper.
- Place the lid on the slow cooker and set for 4-5 hours on low or 2-2 ½ hours on high.
- Serve over pasta, rice or polenta. Enjoy!
- I served mine over cooked penne pasta. Cook to package directions and top with your cacciatore, parsley and grated cheese. Oh, so good!
- Note: My slow cooker tends to cook things quickly. My chicken was perfectly cooked in 4 hours on low.
