  • 3 large eggs room temperature, lightly beaten
  • ½ cup unsalted butter 1 stick / 113 g, melted and cooled
  • ½ cup whole milk about 123 g, warmed to 70–90°F
  • 3 cups bread flour 390 g
  • 3 tablespoons cane sugar 38 g
  • 2 teaspoons bread machine yeast about 6 g
  • ¾ teaspoon kosher salt about 4.5 g

Method
 

  1. Lightly beat the eggs and allow them to come to room temperature. Melt the butter and allow it to cool. Warm the whole milk to approximately 70–90°F.
  2. Add the ingredients to your bread machine pan in the order listed above, unless your bread machine manufacturer recommends a different order.
  3. Place the bread pan into the machine and lock it securely into place.
  4. Select the Soft Bread setting, 1½-pound loaf, and Medium Crust. On our KBS bread machine, the complete cycle takes approximately 3 hours and 11 minutes.
  5. When the cycle is complete, carefully remove the loaf from the bread pan and transfer it to a cooling rack.
  6. Allow the brioche to cool before slicing and serving.

Use room-temperature eggs. Cold eggs can lower the temperature of the dough. Allow the eggs to come to room temperature before lightly beating them.

Let the melted butter cool. Melt the butter before adding it to the bread machine, but don’t add it while it’s piping hot. Allow it to cool first.

Warm the milk gently. We use whole milk warmed to approximately 70–90°F. It should be warm, not hot.

Use bread flour. Bread flour has a higher protein content than all-purpose flour and helps provide the structure needed for this rich, enriched dough.

Follow your bread machine’s ingredient order. We add the ingredients to our KBS bread machine in the order listed in the recipe, but follow your manufacturer’s instructions if they recommend something different.
